White Bean Chili And Couscous

Ingredients:

2 Cups of whole wheat couscous

6 Cloves of garlic

2 Medium sized onions

2 Red bell peppers

1 1/2 Cups of corn

2 Cubes of vegetable bouillons

2 Cans of white beans

2 Cups of sun dried tomatoes...chopped up

2 Teaspoons of dried basil

2 Teaspoons of dried oregano

1 Teaspoons of chili powder

1 Teaspoons of salt

1 Teaspoons of pepper

1/2 Cup of olive oil


While you are at home, go ahead and drain and rinse the beans. Put them in a ziplock bag. In another ziplock bag add the salt, pepper, basil, oregano and chili powder.

When you are camping, boil 2 1/2 cups of water. Add the two bouillon cubes and stir. Add the couscous. Remove the pan from the heat and cover. Let it sit for about 5 minutes.

During this time, slice up the galic cloves, onions and bell peppers.

In another pan, heat up the olive oil. Add the garlic, onion, bell peppers and spices. Cook for 5 minutes (until the onion and bell pepper are soft). Add the beans, sun dried tomatoes, corn and 1/4 cup of water. Cook for 4 minutes. If you want more sauce, just add some more water.

Pour this chili mix over your couscous and dig in!
